Irish Ham and Potato Pie
This hearty Irish dish of ham, eggs and potatoes can be served anytime of the day, from breakfast to supper.
6 large eggs
1/2 cup green onions chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 cups cooked diced potatoes
1 1/2 cups (6 ounces) shredded cheddar cheese
1 cup diced cooked ham
1/2 cup finely chopped green bell pepper
1/2 cup half-and-half (light cream)
- Preheat oven to 350°F (175°C). Generously butter a 9-inch pie dish.
- Whisk together the eggs, onions, salt and pepper in large bowl.
- Add potatoes, cheese, ham, bell pepper and half and half.
Stir to blend. Pour into prepared dish.
- Bake for 1 hour 20 minutes or until tested done when a knife inserted in the center comes out clean. Cut into wedges to serve.
Makes 4 to 6 servings.
