Mandarin Pork Roast
A simple glaze of orange marmalade coats this tasty pork roast, garnished with mandarin oranges. Serve with a wilted spinach salad and wild rice pilaf.
Recipe Ingredients:
2-pound boneless loin roast
Kosher or sea salt and freshly ground black pepper to taste
1/4 cup orange marmalade
1 (8-ounce) can mandarin oranges, drained
Cooking Directions:
- Place roast in shallow pan, season with salt and pepper and coat with marmalade and place in preheated 325°F (160°C) oven. Roast until meat thermometer reads 155°F to 160°F (approximately 65°C to 70°C).
- Let roast rest 5 to 10 minutes before slicing. Garnish servings with mandarin oranges.
