Savory Pork Stir-Fry
Your favorite brand of stir-fry vegetables make this a snap to fix for a weekend meal. Serve with seasonal fruit.
Recipe Ingredients:
1 pound boneless pork loin
1 tablespoons soy sauce
1 tablespoon vinegar
1 teaspoon sesame oil
1 clove garlic, minced
1/2 teaspoon dry ginger
1 teaspoon vegetable oil
1 (10-ounce) package frozen stir-fry vegetables
1 tablespoon chicken broth or water
1 tablespoon toasted sesame seeds (optional)
Cooking Directions:
- Slice pork across grain into 1/8-inch strips. Marinate in soy sauce, vinegar, sesame oil, garlic and ginger for 10 minutes.
- Heat vegetable oil in nonstick pan until hot. Add pork and stir-fry for 3 to 5 minutes, until pork is no longer pink.
- Add vegetables (still frozen) and the chicken broth or water. Stir mixture, cover and steam for crisp-tender vegetables.
- Serve over hot cooked rice, if desired. Sprinkle with toasted sesame seeds, if desired.
Makes 4 servings.
Tip: To make cutting stir-fry strips easier, partially freeze pork loin for 20 to 30 minutes.
