Skillet Ragout with Potato Dumplings
This hearty skillet supper will feed a hungry family and is perfect for a cold winter’s night. Accompany this one-dish meal with only a tossed green salad and your favorite beverage.
Recipe Ingredients:
1 pound pork loin, cut into 1-inch cubes
1 tablespoon olive oil
1 (12-ounce) jar pork gravy
2 tablespoons white wine vinegar
1 tablespoon steak sauce
1 teaspoon Worcestershire sauce
1/4 teaspoon ground black pepper
1/8 cayenne pepper
1 cup halved or quartered fresh mushrooms
1 rib celery, sliced
3/4 cup frozen small onions
1/2 medium green bell pepper, cut into 3/4-inch squares
1 (15-ounce) can black beans, drained and rinsed
1/2 of a 7.6-ounce package instant butter and herb mashed potato mix
1 large egg, beaten
1/4 cup chopped pecans
Cooking Directions:
- In a large skillet, brown pork cubes in hot oil; drain.
- Stir in pork gravy, vinegar, steak sauce, Worcestershire sauce, pepper and cayenne; mix well. Add mushrooms, celery, onions, green pepper and beans, simmer, covered, for 20 minutes.
- Prepare mashed potato mix according to package directions. Remove from heat, quickly stir in beaten egg. Place in mounds on top of boiling meat mixture; cover tightly and cook 5 minutes.
- Sprinkle with pecans and serve.
