Balsamic Artichoke Hearts
A make-ahead artichoke heart and tri-colored bell pepper salad marinated in a balsamic vinaigrette.
1 (15-ounce) can artichoke hearts, drained and halved
1 cup sweet red peppers, finely sliced
2/3 cup sweet green peppers, sliced thin
2/3 cup sweet yellow peppers, sliced thin
1/2 cup fresh flat-leaf parsley, chopped fine
1 bottle your favorite balsamic vinaigrette dressing
- Combine ingredients. Add one bottle of your favorite balsamic vinaigrette dressing. Toss and chill until ready to serve.
