Black Bean Salad
A colorful and spicy, Southwestern-style black bean salad with corn, green pepper and red onion.
Recipe Ingredients:
2 (15-ounce) cans black beans, drained, rinsed
1 (11-ounce) can whole kernel corn, drained
1/2 cup mayonnaise or salad dressing
1/2 cup green pepper strips
1/2 cup red onion, sliced
2 tablespoons fresh cilantro (or parsley), chopped
2 tablespoons lime juice
1 clove garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground red pepper
Cooking Directions:
- Mix all ingredients in large bowl. Refrigerate several hours or overnight.
Makes 8 servings.
Nutritional Information Per Serving (1/8 of recipe): 170 calories, 7g fat, 5mg cholesterol, 470mg sodium, 21g carbohydrate, 4g dietary fiber, 5g protein.
