Chicken Pecan Salad

Recipe Ingredients:

1/2 cup fat-free mayonnaise
1/2 cup reduced fat sour cream
6 ounces cooked and cubed chicken breast or turkey
1 cup diced celery
4 apples, diced
1 cup chopped pecans
2 avocados

Cooking Directions:

  1. Mix mayonnaise and sour cream. Add all ingredients, except pecans, and mix well.
  2. Hollow out avocado and serve salad inside; or serve on bed of lettuce and garnish with avocado.
  3. Top with pecans.

Makes 4 servings.
