Chicken Salad in Apple Shells

Recipe Ingredients:
5 medium salad apples (4 halved and 1 diced)
3 pounds diced chicken breast or turkey
4 ounces diced celery
4 ounces diced onion
1 cup light mayonnaise
2 hard-boiled eggs
Cooking Directions:
- Cook meat in boiling water, remove from water and set aside. When cool, cut into bite-size pieces.
- In bowl, combine celery, onion and mayonnaise. Dice hardboiled eggs, and add with diced apple and chicken to salad mix.
- Slice each apple horizontally in half and carefully remove insides, leaving a 1/2-inch thick shell. Scoop one-eighth of the salad mix into each apple shell. Chill before serving.
