Chilled Mushroom Salad
A mushroom lover's perfect picnic side dish. Try using a variety of mushrooms for a different earthy flavor.
Recipe Ingredients:
8 ounces fresh mushrooms, sliced
Lemon Vinaigrette:
2 tablespoons olive oil
3 tablespoons lemon juice
1/4 teaspoon tarragon
1/4 teaspoon granulated sugar
1/4 teaspoon kosher or coarse salt
Parsley, optional garnish
Cooking Directions:
- In a small bowl, mix together the ingredients for the lemon vinaigrette.
- In a larger bowl, toss mushroom slices with vinaigrette. Garnish with parsley.
