Cold Cottage Bean Salad

Recipe Ingredients:

2 cups (16 ounces) low fat cottage cheese
2 cups cooked beans (navy, Great Northern, pinto, or black beans)
2 cups shredded Chinese or Napa cabbage
1 cup diced smoked chicken or turkey
1 cup pitted whole black olives
1/2 cup sliced radishes
1/4 cup finely chopped parsley
1 cup prepared Italian or vinaigrette salad dressing
Toasted garlic bread

Cooking Directions:

  1. Combine all ingredients in large bowl. Toss well. Cover and chill.
  2. Serve with toasted garlic bread.

Makes 8 servings.
