Greek Chicken Salad
Greek-style chicken salad with shredded carrots, chopped cucumber, kalamata olives and feta cheese tossed with an Italian dressing.
Recipe Ingredients:
2 cups cooked, cubed chicken meat
1/2 cup shredded carrots
1/2 cup chopped cucumber
1/4 cup sliced kalamata or black olives
1/4 cup crumbled feta cheese
1/4 cup Italian style salad dressing
Fresh greens, torn
Cooking Directions:
- In a large bowl combine the chicken, carrots, cucumber, olives and cheese.
- Add the salad dressing and mix well.
- Cover and refrigerate. Allow flavors to marinate for at least 1 hour.
- Serve on a bed of fresh greens.
Makes 2 to 4 servings.
