Magic Dairy Dressing
This adaptable dairy dressing is a breeze to make and very versatile. While delicious by itself, what makes it truly "magic" is the ease with which it can be transformed with the addition of a few flavorful ingredients. Two variations are provided, but feel free to improvise on your own. Serve as a dip or use as a sauce or dressing on meats, fish, vegetables, salads and fruit. It is also a tasty sandwich spread and makes a great marinade.
Recipe Ingredients:
2 cups low-fat Real California cottage cheese
1 cup plain nonfat Real California yogurt
2 teaspoons lemon juice
Cooking Directions:
- Place all ingredients in a food processor or blender and process until smooth, 1 to 2 minutes. Store refrigerated in a tightly closed container for up to one week.
Makes 3 cups.
Variations:
Turkish Honey Mint: In a small bowl, combine 1 cup Magic Dressing, 2 tablespoon honey and 1 tablespoon chopped mint. Mix well. Store refrigerated in a covered container for up to one week.
California Asian: Place 1/2 cup Magic Dressing, 1/4 cup light miso, 1/4 cup honey, 1 teaspoon soy sauce, 1 teaspoon sesame oil, 1/2 teaspoon chopped ginger in a food processor or blender and process until smooth, or chop the ginger fine and mix all ingredients together by hand. Store refrigerated in a covered container for up to one week.
Tips:
- Substitute plain low-fat yogurt if preferred.
- Miso is available at specialty stores and Asian markets.
