Mediterranean Tuna Salad
A satisfying entrée salad featuring albacore tuna, fusilli pasta, havarti cheese, kalamata olives, bell pepper and green onions tossed with your favorite Italian dressing.
3 (6.5-ounce) cans water packed albacore tuna, drained and flaked
1/2 pound havarti cheese, cut into 1/2-inch cubes
1/2 cup pitted kalamata or black olives, thinly sliced
1 (16-ounce) package fusilli, cooked according to package directions
1 cup thinly sliced green onions
1/2 cup finely chopped red bell pepper
1/2 cup thinly sliced green bell pepper
Zest from 1 lemon
1 (8-ounce) bottle Italian salad dressing
8 Lettuce leaves, washed and patted dry
Olives, for garnish
- Combine all ingredients in a large bowl. Toss to combine. Let stand for 15 minutes. Serve on a lettuce leaf. Garnish with olives, if desired.
