Neptune Appetizer Salad
A tasty crab salad with diced apple, cucumber and celery tossed with a lemon-dill mayonnaise.
2 Red Delicious apples, diced
1/4 cup vinaigrette-style dressing
6 to 8 ounces Alaska Snow crab, frozen or canned
1/2 cup diced cucumber
1/2 cup diced celery
1/3 cup mayonnaise
1 teaspoon lemon juice
1/2 teaspoon dried dill weed
1/4 teaspoon salt
- Toss diced apples with French dressing.
- Drain and slice crab.
- Toss crab, cucumber and celery with apples. Chill.
- Blend mayonnaise, lemon juice, dill weed and salt. Mix with salad.
- Serve on salad plates lined with greens.
Makes 6 to 8 servings.
