Pickled Beet Salad
Homemade or purchased pickled beets shine in this salad.
1 (16-ounce) jar pickled beets
2 tablespoons orange juice
2 tablespoons cider vinegar
2 tablespoons olive oil
1/4 teaspoon seasoned salt
1/8 teaspoon dill weed
- Chill beets; drain and arrange on 4 lettuce-lined salad plates.
- In jar with tight-fitting lid, shake together the orange juice, cider vinegar, olive oil, salt and dill weed. Drizzle with dressing.
Makes 4 servings.
