Savory Cheese and Tomato Salad
This is a must try salad. Serve with warm dinner rolls and butter.
1 (12-ounce) package STOUFFER'S Spinach Soufflé
1 (8-ounce) package cream cheese, softened
2 (3.5-ounce) package logs goat cheese
1 teaspoon coarsely ground pepper
1/4 teaspoon salt
1 large egg
1/4 cup water
1/2 cup Italian-seasoned breadcrumbs
1 vegetable oil
8 cups mixed salad greens
1 cup oil-and-vinegar dressing
2 large tomatoes, thinly sliced
- Thaw spinach souffle in microwave at MEDIUM (50% power) 6 to 7 minutes.
- Stir together spinach souffle and next 4 ingredients until well blended. Shape mixture into 16 patties. Chill 8 hours.
- Pour oil to a depth of 1/2 inch into a large heavy skillet. Fry patties, a few at a time, in hot oil over medium-high heat 2 to 3 minutes on each side or just until golden brown. Drain on paper towels.
- Toss salad greens with dressing. Place in individual salad plates; top with tomato slices and cheese patties.
