Smoked Mackerel and Apple Salad

Recipe Ingredients:
12 ounces 'ready to eat' smoked mackerel fillets, skinned
1 large apple, peeled and chopped
2 stalks celery, chopped
1 ounce raisins
Salt and ground black pepper to taste
1 tablespoon lemon juice
3 tablespoons yogurt
2 tablespoons mayonnaise
Shredded lettuce
Grated lemon rind, for garnish
Cooking Directions:
- Cut the fish fillets into cubes and place in a large bowl. Mix in the apple, celery, raisins, seasoning and lemon juice.
- Mix mayonnaise and yogurt together and pour over salad. Serve on a bed of crisp shredded lettuce accompanied with brown bread and butter.
Makes 4 servings.
