Spicy Corn Salad
A tasty combination of fresh corn, cucumbers, sweet Vidalia onions and jalpeño seasoned with lime, honey and cumin.
Recipe Ingredients:
1 tablespoon lime juice
1 jalapeño, seeded and minced
1 1/2 teaspoons honey
1/4 teaspoon ground cumin
1/4 cup extra virgin olive oil
4 ears corn, shucked and kernels sliced off
2 cucumbers, peeled, halved, deseed and sliced
1/2 Vidalia onion, thinly sliced
Salt and pepper to taste
Cooking Directions:
- In a blender add the jalapeño, honey and cumin, pulse until blended.
- Gradually add the extra virgin olive oil and continue blending.
- Add corn kernels to the bowl.
- Add cucumbers to the bowl.
- Add onions to the bowl.
- Pour the dressing over the salad, toss season with salt and pepper then serve.
Makes 6 to 8 servings.
