Spicy Wilted Salad with Ham
A tart citrus dressing livens up ham tossed with vegetables and greens for an early-spring supper. Serve with warm dinner rolls or corn muffins.
Recipe Ingredients:
3/4 pound ham thinly sliced and cut into strips
4 cups torn lettuce (leaf or iceberg)
2 cups chopped fresh spinach
1 cup cherry tomatoes, halved
1/2 cup orange juice
3/4 teaspoon chili powder
1/4 teaspoon crushed red pepper flakes
1 tablespoon white wine vinegar
2 tablespoons vegetable oil
Cooking Directions:
- Thaw packaged vegetables in cool water.
- In large bowl toss together vegetables, lettuce, spinach and tomatoes.
- In small saucepan, bring orange juice, chili powder and crushed pepper to a boil; stir in vinegar and oil and stir to blend.
- Pour dressing over salad; toss well and serve immediately.
