Summer Greens with Kiwi Champagne Vinaigrette

2/3 cup olive oil
1/4 cup champagne vinegar
1/4 cup orange juice
1 tablespoon fresh cilantro, chopped
1 teaspoon granulated sugar
1/2 teaspoon salt
1/4 teaspoon ground black pepper
8 ounces fresh salad greens, washed and torn
1 cup sweet yellow bell pepper, seeded and diced
3 kiwifruit, peeled and cubed
- For Kiwi Champagne Vinaigrette: Slice 2 kiwifruit into halves and spoon out chunks into a small food processor. Add olive oil, vinegar, orange juice, cilantro, sugar, salt and pepper; process until blended. Makes 1 1/2 cup
- For Green Salad: Place salad greens and yellow pepper in large bowl. Add 1/2 cup Kiwi Champagne Vinaigrette and toss until mixed. Arrange kiwifruit on top of salad. Serve immediately.
