Super-Simple Black Bean and Chicken Salad
with Gruyère Cheese
Just as the recipe's name claims, this is a super simple black bean and chicken salad tossed with your favorite salsa and cubes of Gruyère cheese.
Recipe Ingredients:
2 (15-ounce) cans black beans, drained and rinsed
1 cup cooked chicken, shredded or chopped
1 cup prepared salsa
1 cup (4 ounces) Wisconsin Gruyère cheese, cut into 1/2 inch cubes
1 (16-ounce) package mixed salad greens
Cooking Directions:
- In a large bowl, combine all ingredients except for the greens.
- Arrange the greens on a large serving platter. Mound bean and chicken mixture on top.
Makes 4 servings.
