Turkey & Artichoke Country Salad
Serve Italian bread or hard rolls with this tasty main dish salad. A great recipe for using leftover turkey.
2 (6-ounce) jars marinated artichoke hearts, drained, reserve marinade
2 tablespoons balsamic vinegar
1/4 teaspoon coarsely ground pepper
1 (10-ounce)package (6 cups) mixed salad greens
1 (8-ounce) package (3 cups) fresh mushrooms, halved
8 ounces unsliced deli turkey, cubed 1/2-inch
4 ounces (1 cup) mozzarella cheese, cubed 1/2-inch
2 medium tomatoes, cut into wedges
2 tablespoons freshly grated Parmesan cheese
- Stir together reserved marinade, vinegar and pepper in small bowl.
- Toss together all salad ingredients and dressing mixture in large bowl.
Makes 8 servings.
