Open Faced Roast Beef Sandwich

Recipe Ingredients:

4 slices sourdough bread
Olive oil, as needed
4 tablespoons herbed cream cheese
1 pound Certified Angus Beef ® deli roast beef sliced thin
1 (14-ounce) can artichoke heart, drained and chopped
1/2 pound smoked mozzarella cheese, sliced thin
2 Roma tomatoes, diced

Cooking Directions:

  1. Preheat oven to 350°F (175°C).
  2. Brush bread with olive oil and toast 3 to 5 minutes until lightly browned.
  3. Top each slice of toast with 1 tablespoon herb cream cheese, 4 ounces roast beef (or approximately 3 slices), 1 tablespoon chopped artichoke hearts, and 2 slices or 2 ounces mozzarella cheese. Place on cookie sheet and bake open-faced for 10 minutes, or until cheese browns.
  4. Garnish with diced tomatoes. Serve with your favorite pasta salad, if desired.
