Sicilian Tomato-Basil Wrapwich
Based on the classic Italian salad, Insalata Caprese, this quick and easy sandwich wrap is filled with sliced tomato, sliced fresh mozzarella and basil leaves, along with arugula or romaine leaves and a drizzle of Italian salad dressing.
4 fajita-size flour tortillas or basil flavored tortillas
2 cups arugula or torn romaine lettuce leaves
2 plum tomatoes, cut into wedges
12 small slices fresh mozzarella cheese (about 4 ounces)
8 large basil leaves
Italian salad dressing
- Squeeze it: Squeeze mayonnaise generously onto tortillas.
- Stuff it: Layer arugula, tomatoes, cheese and basil down center of each tortilla. Drizzle with dressing.
- Wrap it: Roll and fold the filled tortilla.
Makes 4 servings.
