Southern Fried Mahi-Mahi Sandwich

Recipe Ingredients:
Red Chili, Lime Cilantro Aïoli (optional)
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon red chili paste (chipotle)
2 tablespoons fresh Florida lime juice
1 teaspoon lime peel, finely grated
Cilantro, chopped, to taste
Salt and freshly ground black pepper to taste
Sandwich:
2 large eggs
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 cup all-purpose flour
Salt and freshly ground black pepper to taste
1 cup cornmeal
4 (5-ounce) Florida Mahi-Mahi fillets
1 cup vegetable oil
4 soft sandwich rolls, split
Leaf lettuce
2 tomatoes, sliced thin
Cooking Directions:
- For Red Chili Lime Cilantro Aïoli: Combine all ingredients in small bowl. Cover and refrigerate. Aïoli can be made several days in advance.
- For Sandwich: Beat together eggs, salt and cayenne in a shallow dish.
- Season the flour with salt and pepper. Place flour mixture and cornmeal in separate shallow dishes.
- Coat fillets in seasoned flour; dip into egg wash and then coat with cornmeal.
- In a deep pan, cook the fillets in 1 inch of oil at 375°F (190°C) on a deep-fat thermometer for 2 to 4 minutes, browning on each side. Drain on absorbent paper.
- Serve on sandwich rolls with lettuce and sliced tomatoes with, if desired, Red Chili Lime Cilantro Aïoli.
