Sweet Potato Sandwich Wraps
Sweet potato purée replaces mayonnaise or mustard and pairs well with sliced turkey, avocado.
1 medium sweet potato
1/2 teaspoon garlic powder
2 tablespoons lemon juice
1/4 teaspoon salt
Freshly ground pepper
1/4 teaspoon thyme
1/4 teaspoon basil
4 (10-inch) flour tortillas
8 slices turkey breast
1 large ripe tomato
- To Make Sweet Potato Purée: Boil sweet potato in water until softened. Remove skin and purée in food processor. Stir in garlic, lemon juice, and seasonings and set aside to cool.
- Lay tortillas out flat on work surface and spread purée to 1/2-inch of edges. Lay out 2 slices turkey on each.
- Slice tomato thinly. Remove pit from avocado and slice. Arrange tomato and avocado slices over turkey. Roll each tortilla up into a log. Cut in half and serve.
