Toasty Warm Chicken Salad
This hot chicken salad makes a great savory filling for the puff pastry. Leftover turkey from Thanksgiving dinner can be used as a substitute for the chicken.
4 large hard-boiled eggs, chopped
1 (10-ounce) can of chunk chicken
1/4 cup Italian dressing
1 cup celery, chopped
1/2 cup mayonnaise
1 (3-ounce) package cream cheese, softened
2 teaspoons lemon juice
1/2 teaspoon salt
1/2 cup seasoned bread crumbs
1 tablespoon melted margarine or butter
- In a medium bowl, place chicken, Italian dressing, hard-boiled eggs, and celery.
- In separate bowl blend mayonnaise, cream cheese, lemon juice, and salt until smooth.
- Stir the two mixtures together and pour into a 9x9-inch glass baking dish.
- Combine butter and bread crumbs and sprinkle evenly over the top. Microwave on full power for 7 to 9 minutes or until bubbly.
