Broiled Catfish Fillets Italian Style

Broiled Catfish Fillets Italian StyleRecipe courtesy of The Catfish Institute.

Recipe Ingredients:

1 1/2 pounds catfish fillets
1 large tomato, chopped
1 medium onion, chopped
1 tablespoon lemon juice
2 teaspoons olive oil
1 tablespoon capers (optional)
1 teaspoon hot sauce
1/2 cup shredded reduced fat cheddar cheese

Cooking Directions:

  1. Preheat broiler.
  2. Stir together lemon juice, olive oil, and hot sauce. Brush both sides of fillets. Broil about 4-inches from heat for 5 minutes.
  3. Meanwhile, stir together tomato, onion, capers and cheese. Spoon over fish. Sprinkle with salt and pepper; broil an additional 5 minutes.

Makes 4 servings.
