Catfish Kabobs with Pineapple Marinade

Recipe Ingredients:

1 pound catfish, cut in pieces
6 ounces pineapple juice
1 tablespoon brown sugar, packed
2 teaspoon olive oil
1 1/2 cup fresh cubed pineapple
1 1/2 cup peeled orange sections or sliced papaya

Cooking Directions:

  1. Cut fish into pieces.
  2. Place fish in dish with juice, brown sugar, packed and olive oil. Stir to coat. Marinate in refrigerator for 1 hour.
  3. Place fish pieces, cubed pineapple, oranges or papaya on skewers. Baste with pineapple marinade.
  4. Grill 3 minutes per side basting occasionally.
