Crab Cakes

Recipe Ingredients:
8 ounces mixed crab meat
8 ounces potatoes, cooked and mashed
Salt and ground black pepper to taste
1/2 of a small onion, grated
1 tablespoon fresh chopped parsley
Pinch cayenne
1 tablespoon lemon juice
2 large eggs, beaten - divided use
All-purpose flour
2 ounces dry bread crumbs
1 ounce oatmeal
Vegetable oil, for shallow frying
Lemon wedges for garnish
Cooking Directions:
- Mix together potatoes, crabmeat, seasoning, onion, parsley, cayenne and lemon juice.
- Bind together with half of the beaten egg, and shape into 9 cakes, using floured hands.
- Mix bread crumbs and oatmeal together. Dip the cakes in beaten egg and coat with the bread crumbs mixture.
- Shallow fry in hot oil for 4 to 6 minutes, turning once.
- Serve with lemon wedges.
Makes 9 crab cakes.
