Crawdad Pilaf

Recipe Ingredients:

2 cups cooked rice
1/2 cup stuffed olives, sliced
1 small onion, chopped
1 medium green pepper, chopped
1/2 cup shredded cheddar cheese - divided use
3 cups cooked crayfish meat
3 tablespoons butter
4 tablespoons all-purpose flour
2 cups milk

Cooking Directions:

  1. Combine rice, olives, onion, green pepper, crayfish meat and half of the shredded cheese together and spoon into a well greased casserole.
  2. Melt butter in a saucepan, stir in flour and cook for 1 minute. Stir in milk and bring to a boil, stirring constantly, cook until thickened, about 2 minutes. Pour over casserole and sprinkle with remaining cheese.
  3. Bake at 350°F (175°C) for about 30 minutes or until top is brown.
