Crispy Bacon Sprats (Smoked Sardines)

1 pound sprats (smoked sardines)
2 tablespoons butter or margarine
4 slices back bacon, chopped
1/4 cup fresh brown bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
- Melt the butter in a large frying pan and fry the bacon until crispy.
- Meanwhile, remove heads from sprats, if preferred, and clean large sprats.
- Add to the pan and cook for 3 to 5 minutes, stirring occasionally, until sprats are pale golden brown.
- Sprinkle with bread crumbs and parsley and cook for a further 2 to 3 minutes, until bread crumbs are crispy.
Makes 4 servings.
