Crispy Herring with Spinach and Pine Nuts

Recipe Ingredients:
1 pound herring fillets
2 tablespoons olive oil
1 small onion, chopped
2 ounces frozen chopped spinach, slightly thawed
1/2 cup fresh bread crumbs
2 tablespoons freshly grated Parmesan cheese
Salt and ground black pepper to taste
1 tablespoon pine nuts, lightly chopped
Cooking Directions:
- Preheat oven to 425°F (220°C).
- Heat oil in a pan. Add onion and cook 2 to 3 minutes. Add spinach, bread crumbs and cheese. Cook 1 minute and set aside to cool.
- Place each fillet on a chopping board skin side down and season with salt and pepper. Spoon stuffing over each fish, roll up and secure with a cocktail stick, if necessary.
- Bake 10 to 15 minutes.
- Garnish with pine nuts and serve with a green salad and Ciabatta or pita bread.
