Fish Fajitas

Recipe Ingredients:
1 pound skate, coley or cod fillets, skinned and cut into strips
1 clove garlic, crushed
Pinch cayenne pepper
Juice and rind of 1 lime
1 tablespoon beer or white wine
1 tablespoon vegetable oil
1 onion, cut into wedges
1 red pepper, seeded and cut into strips
1 green pepper, seeded and cut in strips
3 tablespoons taco sauce
Fresh chopped parsley, for garnish
Cooking Directions:
- Combine the garlic, cayenne pepper, lime and beer or wine. Add the fish and let stand for 15 minutes.
- Heat the oil in a wok or large frying pan. Add the onion and peppers and cook for 4 to 5 minutes or until they start to blacken in color.
- Add the fish and liquid and cook for 3 to 4 minutes.
- Serve with war medium fajitas accompanied by iceberg lettuce, sour cream, guacamole and salsa.
Makes 4 servings.
