Fish In Beer Batter

Recipe Ingredients:

Vegetable oil for deep frying

Beer Batter:
1/2 cup all-purpose flour
Pinch of salt
2 tablespoons vegetable oil
5 ounces light beer
1 large egg white

4 (6-ounce) haddock fillets
Seasoned flour (salt, pepper, etc., as desired)

Cooking Directions:

  1. Preheat the oil to 350°F (175°C).
  2. Prepare Beer Batter: Sift flour and salt into a bowl. Make a well in the center, pour in oil and beer, and carefully mix into the flour.
  3. Whisk the egg white until stiff and fold into the batter.
  4. Coat the fish in seasoned flour and dip into the batter; drain and lower into the hot oil.
  5. Fry until the batter is crisp and golden.
  6. Remove from the oil and drain on absorbent paper.

Makes 4 servings.
