Fish In Beer Batter

Recipe Ingredients:
Vegetable oil for deep frying
Beer Batter:
1/2 cup all-purpose flour
Pinch of salt
2 tablespoons vegetable oil
5 ounces light beer
1 large egg white
4 (6-ounce) haddock fillets
Seasoned flour (salt, pepper, etc., as desired)
Cooking Directions:
- Preheat the oil to 350°F (175°C).
- Prepare Beer Batter: Sift flour and salt into a bowl. Make a well in the center, pour in oil and beer, and carefully mix into the flour.
- Whisk the egg white until stiff and fold into the batter.
- Coat the fish in seasoned flour and dip into the batter; drain and lower into the hot oil.
- Fry until the batter is crisp and golden.
- Remove from the oil and drain on absorbent paper.
Makes 4 servings.
