Fish Kiev Parcels

Recipe Ingredients:
4 (6-ounce) thin haddock or whiting fillets, skinned
6 tablespoons butter, softened
1 clove garlic, crushed
1/2 tablespoon chopped fresh flat-leaf parsley
1/2 cup dry bread crumbs
Zest of 1/2 lemon
1 tablespoon all-purpose flour
1 large egg, beaten
1 1/2 tablespoons light olive oil
Salt and ground black pepper to taste
Lemon slices for garnish (optional)
Cooking Directions:
- Preheat oven to 425°F (220°C).
- Cream butter, garlic and parsley together. Spoon onto cling film and roll into a sausage shape. Freeze until hard (about 15 minutes).
- Mix together bread crumbs and lemon rind.
- Lay fillets on a board, skinned side up. Season well.
- Cut butter mixture into 4 equal size pieces and lay in the center of each fish fillet. Wrap fish around the butter to form a parcel.
- Dust each parcel with flour; dip in egg and coat with bread crumbs.
- Chill in the refrigerator for 30 minutes before baking.
- Place oil in a shallow roasting pan, and heat in the oven for 2 to 3 minutes Add the parcels to the pan and bake for 10 minutes, basting once halfway through cooking. Remove from oven and drain on paper towel.
- Serve with a crisp salad, if desired.
Makes 4 servings.
