Florida Shrimp with Pasta

Recipe Ingredients:

1 (8-ounce) package angel hair pasta
1 large onion
1 garlic clove, crushed
2 tablespoons butter
1 (3-ounce) package sun-dried tomatoes, chopped fine
1 pound shrimp, peeled and deveined
Crushed dried red pepper flakes to taste
Salt and ground black pepper to taste
2 tomatoes, chopped
1/2 cup freshly grated Parmesan cheese
1 (3.5-ounce) package feta cheese
Capers to taste

Cooking Directions:

  1. Cook the angel hair pasta according to package directions. When cooked, place in a large bowl.
  2. Sauté the onion and crushed garlic in butter. Add the sun-dried tomatoes. Add the shrimp, salt and pepper and crushed red pepper. Cook just until shrimp are pink in color.
  3. Mix the shrimp dish in with the pasta. Add fresh tomatoes, Parmesan and feta cheese, and capers. Mix and serve while warm.

Makes 4 servings.
