Fried Catfish Fingers with Dipping Sauce

2 cups white cornmeal
Salt and ground black pepper to taste
1 pound catfish, cut into strips
Peanut oil, as needed for frying
Your favorite dipping sauce for accompaniment
- Place cornmeal in a shallow dish; season with salt and pepper.
- Dredge catfish strips in cornmeal mixture, shaking off excess. Set aside on wax paper lined baking sheet.
- Pour 2-inches peanut oil into deep fryer; heat to 375°F (190°C) on a deep frying thermometer. Add catfish strips three at a time (do not overcrowd the fryer); fry for 5 minutes, turn to cook evenly.
- Serve with dipping sauce.
