Fried Florida Mullet Fingers

Recipe Ingredients:

2 pounds Florida mullet fillets
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup all-purpose flour
1 cup yellow cornmeal
2 teaspoons cayenne pepper
Florida lemon slices
Light olive oil for frying

Cooking Directions:

  1. Preheat oil to 375°F (190°C) in deep fryer or deep saucepan.
  2. Cut fillets into 4 to-5-inch strips.
  3. Combine salt, pepper, flour, cornmeal and cayenne; mix well. Coat fish with mixture.
  4. Deep fry fish in hot oil for 4 to 5 minutes until fish is golden brown. Drain on paper towels and serve with lemon slices.
