Grilled Fish with Orange and Tarragon

Recipe Ingredients:

1/3 cup orange juice
2 tablespoons butter, melted
1 tablespoon tarragon, chopped
Salt and ground black pepper to taste
1 pound skate, haddock or cod fillets, skinned

Cooking Directions:

  1. Preheat grill.
  2. Mix together juice, butter, tarragon, salt and pepper.
  3. Brush fish with the juice mixture.
  4. Grill fish for 8 to 10 minutes, turning once and basting with any remaining juice.
  5. Serve with char-grilled vegetables, if desired.

Makes 4 servings.
