Grilled Pecan Trout

Recipe Ingredients:

2 whole trout, cleaned
2 tablespoons chopped pecans
1 tablespoon dry sherry
Freshly ground black pepper
Olive oil

Cooking Directions:

  1. Preheat grill; line fish grill pan with foil.
  2. Brush foil with oil; add trout.
  3. Slash through skin and brush trout with oil. Drizzle with juice of lime, season; sprinkle with sherry and scatter with pecans.
  4. Grill for 10 minutes, turning once. Time may vary according to thickness of trout. However, it is cooked when the flesh becomes opaque and flakes easily when tested with a fork.

Makes 2 servings.
