Herb Potato Crusted Fried Mullet

Recipe Ingredients:

1 Florida egg, beaten
1 tablespoon water
Salt to taste
1/4 teaspoon cayenne pepper
1 cup mashed potato flakes
1 (0.7-ounce) envelope Italian salad dressing mix
1 tablespoon dried parsley flakes
4 (6-ounce) Florida mullet fillets
1 cup vegetable oil

Cooking Directions:

  1. Combine egg, water, salt and pepper in a shallow dish.
  2. Combine potato flakes, Italian dressing and parsley flakes in a separate shallow dish. Dip fillets into egg wash then in potato mixture to coat.
  3. In a deep pan, cook the fillets in 1 inch of oil at 375°F (190°C) on a deep-fat thermometer for 2 to 4 minutes, browning on each side. Drain on absorbent paper.

Makes 4 servings.
