Italian-Style Fish Fillets
Mild, white fish fillets are braised in an Italian-seasoned tomato sauce with white wine and black olives. Serve with a sprinkling of Parmesan cheese.
Recipe Ingredients:
2 tablespoons olive oil
1 small onion, sliced
2 cloves garlic, finely minced
1 (14.5-ounce) can ready-cut tomatoes with juice
1 (2.25-ounce) can sliced olives, drained
1 tablespoon minced fresh flat-leaf parsley
1/2 cup dry white wine
1 pound fresh haddock or cod fillets
Cooking Directions:
- In a large frying pan, heat oil over medium heat. Sauté onions and garlic in olive oil until softened. Stir in tomatoes, olives, parsley, and wine. Simmer for 5 minutes.
- Place fillets in sauce. Simmer for about 5 more minutes, or until fish turns white and flakes easily.
