Italian Style Smoked Fish

Recipe Ingredients:
1 pound smoked cod or haddock, skinned and cubed
1 tablespoon butter or margarine
1 onion, finely chopped
4 ounces button mushrooms, halved
1 teaspoon fresh chopped basil
Large pinch nutmeg
3 tablespoons crème fraîche or double (heavy) cream
1 pound cooked pasta
Fresh basil leaves, for garnish
Cooking Directions:
- Melt the butter in a saucepan, add the onion and cook until soft. Stir in the mushrooms and basil and cook for 1 minute.
- Add the nutmeg and fish, cook for 5 to 8 minutes stirring occasionally. Remove the saucepan from the heat and add crème fraîche or double cream. Stir gently.
- Serve on a bed of pasta and garnish with the fresh basil leaves.
Makes 4 servings.
