Lobster Monterey Jack

Recipe Ingredients:

1 1/2 pounds cooked lobster
1 1/2 ounces Monterey Jack cheese, cut into cubes
1/2 cantaloupe melon, cut into small cubes
1 small star fruit, finely sliced and then halved
2 small oranges, segmented, reserving any juice
1 tablespoon fresh chopped coriander
2 tablespoons mango and orange salad dressing
Mixed baby leaf spinach and watercress salad

Cooking Directions:

  1. Cut the lobster into bite sized pieces, put into a mixing bowl with the cheese, melon, star fruit and orange segments.
  2. Add the coriander, orange juice and salad dressing to the fish mixture.
  3. Serve on a bed of salad leaves in individual serving dishes.

Makes 2 servings.
