Mackerel with Apricots

Recipe Ingredients:
1 pound mackerel fillets (fresh or defrosted)
4 ounces fresh apricots or 8 ounces canned apricots in natural juice, drained and finely chopped
2 tablespoons chopped fresh dill
1 teaspoon lemon juice
1 tablespoon honey or apricot jam
Cooking Directions:
- Preheat grill or barbecue.
- If fresh apricots are used, cut in half, remove stone, roughly chop and cook in 2 to 3 tablespoons water for 2 to 3 minutes, or until slightly soft.
- Sprinkle lemon juice over mackerel fillets and cook for about 5 minutes on a hot grill or barbecue. (If barbecuing, lay fillets on foil to protect against the fierce heat).
- Brush with the apricot jam or honey.
- Mix the dill into the chopped apricots and spoon over the mackerel fillets.
- Cook for another 3 to 4 minutes. Serve immediately with new potatoes and mixed salad, if desired.
