Mexican Fish Tacos

Recipe Ingredients:
1 pound skate, coley, pollack or cod fillets, skinned and cubed
2 teaspoons sunflower oil
1 small onion, sliced
1 green pepper, seeded and chopped
1 clove garlic, crushed
1 (15-ounce) can chili beans
3 tablespoons taco sauce, mild or hot
1 tablespoon tomato purée
8 to 12 taco shells or tortilla chips
Toppings:
Shredded lettuce
Shredded cheese
Salsa
Cooking Directions:
- Preheat the oil in a large pan and cook the onion, pepper and garlic until soft and transparent.
- Stir in chili beans, taco sauce and tomato purée.
- Add prepared fish, stir carefully, cover and simmer gently for 5 to 6 minutes until fish is cooked.
- Serve in taco shells topped with lettuce, cheese and salsa. Or, serve with tortilla chips.
Makes 4 to 6 (2 taco) servings.
