Pan-Fried Fish with Lemon Hollandaise Sauce

4 (6-ounce) sole fillets, skinned
2 tablespoons plain (all-purpose) flour
Salt and ground black pepper to taste
1 tablespoon olive oil
2 tablespoons butter
1 (8.5-ounce) jar hollandaise sauce
1 to 2 tablespoons lemon juice
Chopped fresh flat-leaf parsley, for garnish
- Dip the fish in seasoned flour. Shake off any excess.
- Heat the oil in a frying pan; add the butter. Cook each fillet for 2 to 3 minutes on each side or until golden brown.
- Add the hollandaise sauce and lemon juice. Simmer for 2 to 3 minutes.
- Garnish and serve with potatoes and green vegetables, if desired.
Makes 4 servings.
