Rosti Fish Cakes

Recipe Ingredients:
1 pound cod or coley fillets, mashed*
10 1/2 ounces potatoes, peeled and parboiled and grated
1 small onion, grated
1 tablespoon lemon juice
Salt and ground black pepper to taste
1 tablespoon olive oil
Chopped flat-leaf parsley for garnish
Cooking Directions:
- Place the fish in a bowl and add the potato, onion, lemon juice and seasoning. Shape the mixture into 8 round flat cakes.
- Heat the oil and cook cakes for 3 to 4 minutes on each side and until golden brown. Garnish and serve with baked beans.
Makes 4 (2 cake) servings.
*This dish is also delicious made with smoked cod or haddock.
