Seafood Seared Tagliatelle

Recipe Ingredients:

1 pound tagliatelle or fettuccine pasta
1 tablespoon macadamia oil

Salsa Verde:
1 cup fresh coriander (cilantro)
1/2 cup fresh flat-leaf parsley
1 tablespoon capers
1/4 cup macadamia oil
2 tablespoons lime juice
2 tablespoons macadamias
Ground black pepper

1/2 cup macadamias
1 1/4 pounds mixed seafood such as salmon, scallops, raw shrimp (peeled), trout

Cooking Directions:

  1. Bring a large saucepan of water to a boil and cook pasta according to package directions.
  2. Meanwhile, combine all salsa verde ingredients in a blender and, using the pulse button, process to a coarse purée.
  3. Heat a non-stick pan or grill pan to high, add seafood and macadamias and cook, stirring occasionally, 2 to 3 minutes or until seafood is just cooked (fish should still be pink inside).
  4. To Serve: Drain pasta and toss with a little of the salsa verde. Place pasta on plates, top with seafood and macadamias, and spoon over the remaining salsa verde.
